Mix all the ingredients for the marinade together and gently rub on fish fillets to coat well. Let it marinade for at least 1 hour , before placing on a hot pan/grill and grill for 3-4 minutes on each side to get some browning. Remove from pan and set aside.
Heat oil in a deep wide pan and saute onions and garlic till they turn lightly brown. Add in garlic, chili and spices, and fry for a minute to blend well. Add in tomatoes and cook, stirring occasionally till all becomes a thick sauce. Season with salt (to taste).
Place the fish fillets into the sauce and spoon some sauce over it.
Cover and cook for 5 minutes.
Garnish with fresh coriander leaves.
Serve with Tita Basmati rice and any of the vegetable dishes you can find on our website.
