Put oil in a large saucepan over medium-high heat. Add the onion, garlic, ginger, and chile, and saute for 3 minutes. Add the Tita Mutton Masala, Tita Garam Masala and salt and toast for 10 seconds and then add the tomato paste and stir well.
Add the mutton, turning them frequently as they cook for about 20 minutes.
Add the tomatoes, potatoes (optional), coriander, and water and mix well. Bring the mixture to a boil and then reduce the heat to a simmer. Cover with a lid and let cook for about 20 to 25 minutes, or until the meat and potatoes are cooked through.
Serve the Mutton Masala with Basmati rice and any of the vegetable dishes you can find on our website.
